Organic Non-Dairy Recipes

Cauliflower and cold smoked tomato pie | Melon blintzes with strawberries | Zucchini and apple torta | Cucumber gazpacho

Cucumber gazpacho (Prep time: 40 minutes)

Ingredients:
4 ea Cucumber, peeled and seeded
1 c Yogurt
1 tsp Red curry paste
20 leaf Cilantro
2 ea Lime
1/2 Olive oil
10 leaf Mint
1 ea Jalapeno
Salt
Pepper

Procedure:
Puree all ingredients in blender. Season to taste.
