Pineapple Basil Sorbet

Serves 4

  • 3/4 cup sugar
  • 1/2 cup water
  • 2 large, fresh basil leaves
  • 1 cup pineapple juice

1. To make a sugar syrup, mix the sugar and water, bring to a boil, and turn heat off.

2. Add the basil leaves to 1/2 cup of syrup and steep for 1/2 hour.

3. Stir pineapple juice into syrup.

4. Mix in an ice-cream machine, following manufacturer's directions.

5. Freeze until ready to serve.
