L'Hirondelle at Les Thermes Marins de Monte-Carlo

Serves 20

Red Fruit Salad Served with Strawberry Juice and Goat Cheese Sherbet

Goat Cheese Sherbet
2 ½ lb goat cheese
1 lb cream
1 lb of sugar
1 juiced lemon
Bring everything to a boil and mix in a blender. Mix again one hour before serving

Strawberry Juice
4 ½ lb of strawberries
½ lb of ice sugar
4 cups water
Cook 11/2 hours in a bain-marie
Filter and reduce if necessary

Fruit salad
4 ½ lb of medium strawberries
1 lb of raspberries
1 lb of either blueberries or black currants
1 lb of red currants
1 lb black berries
