Spa Recipes: Hearty, Homemade Granola

Red Mountain Resort and Spa’s hearty granola is a great way to start the day, or to snack healthfully throughout it. Make a big batch for the week and combine with yogurt or milk and fresh fruit for a delicious and nutritious breakfast!
Red Mountain Granola:
From “Red Mountain Spa Adventure Cuisine Cookbook”
(makes ½ gallon, 16 ½ cup servings)
3c Rolled oats
1c pumpkin or squash seeds, dried
1c sunflower seeds
2 oz. dried, chopped cherries
1/6th c prunes
½ c chopped pecans,
½ c honey
1c apple juice
¼ c molasses
1/6th c dried, chopped, apricots
Mix all ingredients. Bake at 350 degrees for 30 minutes, stirring every 10 minutes, to toast.
