TRADITIONAL SOLTERITO SALAD
Ingredients:
250 gr Red onions
250 gr Tomato
3 Corn
50 gr Calamatos Olives
500 gr Faba beans
1 unit Red Hot Peruvian Chili Pepper
200 gr Natives Potatoes
Parsley
Salt
Black Pepper
Vegetal Oil
Vinegar – Lime
Preparation:
In a saucepan to cook beans, diced potatoes and corn. Once cooked the corn, kernels.
Chop the cheese and olives, diced 1 cm. Add the chopped onion washed and chopped tomatoes or hot peppers, seeded, chopped veins. Season with oil, salt, pepper and finally the vinegar and lemon juice. Add the chopped parsley.
Also try some exotic Alpaca Carpaccio (or use a more local cut of meat) accompanied by the sweet crunch of green apples and smooth blue cheese! Yum!
ALPACA CARPACCIO WITH ARUGULA, BLUE CHEESE, CRUNCH APPLE & BALSAMIC VINEGAR (7 servings)
Ingredientes :
500 gr Alpaca Prime Rib
150 gr Green Apples
200 gr Arugula
Andean Herbs
Olive Oil and Lime
Salt
100 gr Blue Cheese
Balsamic vinegar
Preparation:
Marinate steak with herbs Andean alpaca, olive oil flavored with garlic, tie or wrap it in plastic (film) in a cylindrical shape and place in freezer. When the meat is half frozen (must be already a little hard)-thin slices and cut into accommodating irlas covering the surface of the plates. Season with salt; add arugula leaves sprayed with drops of balsamic vinegar reduced slightly sweet. Garnish with blue cheese, sliced apples and arugula.
