Whipped Neufchatel Mint Potatoes

A bit indulgent but still a wonderful twist on a holiday classic makes this potato side dish one that your guests will remember and clamor for. Also try Celery Root and Potato Puree or Wasabi Mashed Potatoes.
1¼ lbs Idaho potatoes, peeled and medium diced
3 oz. neufchatel cheese
2 oz. mint, chopped (⅛ lb)
¼ cup 1% milk
1 tbsp olive oil
Pinch of salt
Pinch of pepper
- Wash and peel potatoes.
- Add ½-inch of water to the bottom of your steam pot and heat on high heat.
- Bring to boil and cook until potatoes are soft, approx. 20 min.
- Whip warm potatoes with all other ingredients until smooth.
